Ingredients Needed

1 whole chicken (3-4 lb)
1 fennel bulb
2 small onions, sliced into rounds
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 tablespoon oil
4 fresh sprigs of thyme
Sea salt to taste
1 Simple Roasted Carrots Recipe (see page 176 for recipe)

Cooking Instructions

1. Preheat oven to 425F.

2. Slice onions and the bulb of the fennel into rounds. Set aside the fennel fonts for later and stuff chicken with fonts and thyme sprigs.

3. Cover chicken with spices and rub oil all over chicken (helps with even browning).

4. Lay chicken on top of onion and fennel slices in a baking dish and add 1⁄4 cup water or broth.

5. Place chicken and carrots in oven for 60 to 80 minutes.

6. Spoon the cooking liquid over the chicken and veggies occasionally. This will create tender vegetables and a beautiful browned chicken.

7. Remove chicken from oven when 170F. Cover with aluminum foil for 20 minutes prior to carving.

Cooking Tip from Flavia: Pork Tenderloins often come in pairs. Season extra, wrap in plastic wrap and place into a labeled zip lock bag and freeze raw for future meals. Thaw over 2 nights in fridge, in zip lock and on a tray (in case of leakage).
