I don’t know about you, but I LOVE eating great tasting food and it’s even better when that food is healthy for you, allergy, soy, gluten, sugar and wheat free! That’s what Flavia Del Monte’s Flavilicious Cooking is all about! Fabulous recipes which you don’t have to feel guily about.

I figured I would take a break from just talking about the cookbook to share a recipe with you from it! This is just one of hundreds of recipes featured in Flavilicious Cooking. If this post get’s some love I might share a few more from the book. Obviously I can’t share all of them, but I’m sure Flavia wouldn’t mind me sharing one or two with you.

As I was looking through the cookbook it was so hard to choose. Flavia breaks up her cookbook program into the following sections:

So I decided to just chose a recipe from her Breakfast section. One that looked so good I think I’m planning to make it over the weekend. Gluten Free Oat Cakes is what I chose! They just stood out for me so here is Flavia Del Monte’s recipe for Gluten Free Oat Cakes directly from Flavilicious Cooking:

Prep Time: 5 Minutes
Cook Time: 20 Minutes
Total Time: 25 Minutes
Yield: 7 Oat Cakes

Per Serving: 193 calories, 12 grams of fat, 17 grams of carbs and 5.5 grams of protein.

Ingredients Needed:

1/2 cup almond flour
1/2 cup gluten free oat flour
2 eggs
2 tablespoons organic butter (or oil)
1 tablespoon pure maple syrup
1 teaspoon pure vanilla extract
2 tablespoon milk alternative of choice
1 and 1/2 teaspoons baking powder
1/2 teaspoon potato starch
1/4 cup mini dark chocolate chips or raisins

Flavilicious Cooking Instructions

1. First, combine liquid ingredients in a bowl, adding the dry ingredients after.

2. Let the batter sit for 5 minutes

3. Preheat non-stick frying pan over medium heat, melting 1/2 teaspoon butter or oil.

4. Using a 1/4 cup scoop, empty the batter into the frying pan creating round cakes.

5. Let cook uninterrupted for 2 minutes.

6. Flip the oat cake and cook for 2 minutes longer or until the oat cake is fully cooked inside.

7. Serve with pure maple syrup and dairy free coconut “cream” (optional)

Cooking Tip: You can create your own oat flour easily by placing quick cooking oats into the base of your blender (to just cover blades) and process for a few seconds.
